STATEMENT FOLLOWING THE BBC ‘WEEK IN WEEK OUT’ PROGRAMME

Cig Calon Cymru was established as a purpose-built, state-of-the-art abattoir three years ago to provide top quality Welsh beef and lamb to a range of customers.
We are, quite properly, a highly regulated business monitored closely by the Meat Hygiene Service, by Local Authority Environmental Health officials and by our customers, which include Marks & Spencer and Somerfield.
Our plant at Cross Hands slaughters approximately 450 local cattle and between 600 and 700 lambs a week. During the time we have been in operation (since August 2005) we have consistently had a clean bill of health from all our regulators and met all the stringent hygiene regulations. There has not been one single complaint from any of our regulators or customers during that time.
We regularly offer opportunities for trainee vets to observe our operations and be tutored by the plant's official veterinary surgeon, who is employed by the Meat Hygiene Service.
Recently a BBC journalist who purported to be a prospective veterinary student spent three and a half days at our premises and was accompanied at all times by the Official Vet (OV). As part of her induction, the OV guided her through the slaughtering process and explained the complex auditing controls that must be adhered to at every stage, including the HACCP (Hazard Analysis Critical Control Points) plan.
We are confident that at all times - including when the BBC journalist was conducting her undercover filming - best practice was adhered to. We, nevertheless, take very seriously the issues raised in the ‘Week In Week Out’ programme and will now work both independently and in co-operation with the Meat Hygiene Service to see what further action can be taken to tighten up procedures in order to ensure that the highest standards in hygiene and safety are maintained.
The slaughter of animals involves butchering and all that entails. We have absolutely nothing to hide and any 'unpleasant' sights witnessed by the journalist are part and parcel of this early stage of meat production and found in all abattoirs.
